THE MAESTRO FOCACCERO: ALESSANDRO MARENGO
Alessandro, Arte Bianca's maestro focaccero, belongs to the fourth generation of a family devoted to the highest art of Italian baking.

In 1946, at just 16 years old, Alessandro's father opened his bakery in Santa Margherita Ligure, following in the footsteps of his own father. Alessandro continued the tradition, opening his own bakery in 1990.
After handing over his business, and following a brief stay in Miami — where he was invited to give a series of masterclasses on his craft — Alessandro came to Bilbao at the invitation of Piero and Oner to crown a lifetime devoted to the art of baking.
And so Arte Bianca was born.

Tradition from Ligura
“The work of the artisan baker begins with the careful selection of raw materials and ends once the product has left the oven and begins to cool.
My father taught me that bread dough is alive — it must be cared for until it comes out of the oven”
